Luca Montersino is one of Italy's most respected pastry chefs. His book Tiramisu e Chantilly is considered a bible of Italian pastry. What sets this recipe apart from all others comes down to two things:

Part 1 — Egg Yolk Base (Pasteurization)

Stronger Coffee?Don't soak the biscuits longer — they'll go soggy. Brew the espresso stronger (ristretto-style) or stir in instant coffee powder. The biscuits finish absorbing during the overnight rest.

Instructions

Step 1

Make the Coffee and Chill It

Brew 6–8 shots of espresso (about 600ml total). Pour into a shallow dish or tray.
For stronger coffee flavor, stir in 1–2 tbsp of instant coffee powder while still hot.
Leave to cool completely, then refrigerate. The coffee must be cold before use.

⚠️

Never warm coffeeNever use warm coffee to soak the biscuits. They will collapse and make the tiramisù watery.

💡

No need to sweeten the coffee. The mascarpone cream is rich and sweet enough — the bitterness of the espresso is the counterpoint.

Step 2

Pasteurize the Egg Yolks (Pâte à Bombe)

This is the heart of the Montersino method. The hot syrup cooks the yolks to a safe temperature while creating a stable, voluminous foam.

Place the water in a small saucepan, add the sugar (do not stir). Cook over medium heat.
While the syrup heats, place the egg yolks and vanilla seeds in a large bowl. Beat briefly to loosen.
Monitor the syrup with your thermometer. You are waiting for exactly 121°C / 250°F.
The moment it hits 121°C, with the mixer running, pour the syrup in a thin, steady stream down the side of the bowl onto the yolks. Keep the stream away from the beaters to avoid splattering.
Beat on high speed until the mixture has tripled in volume, turned pale ivory, and the bowl feels cool to the touch (about 8–10 minutes).
The mixture should fall from the beaters in thick ribbons. Transfer to the fridge to cool.

⚠️

121°C is exactBelow this the yolks aren't fully pasteurized. Above it the syrup starts to caramelize. A thermometer is not optional here.

💡

Don't rush this step. The yolks need to cool completely before being combined with the mascarpone or they will melt the cream.

Step 3

Whip the Mascarpone and Cream Together

This is Montersino's signature move — the reason this tiramisù is so much creamier than others.

Add the cold mascarpone and cold heavy cream to a large bowl together.
Beat with the hand mixer, starting on low speed and gradually increasing to high.
Stop when the mixture holds soft peaks — thick and creamy, but still slightly yielding. Think: just past the consistency of thick yogurt.

Do not over-whipIf the mascarpone starts to look grainy or the mixture separates, it's going toward butter and cannot be fixed. Stop early.

Whipping mascarpone alone tends to split. The fat in the heavy cream stabilizes it. This combination is Montersino's key innovation.

Step 4

Fold the Two Mixtures Together

Take the egg yolk base out of the fridge. It should be cool and thick.
Add the whipped mascarpone-cream mixture to the yolk bowl in 2–3 additions.
Fold gently with a rubber spatula using a bottom-up motion. Do not stir — you are preserving as much air as possible.
The finished cream should be smooth, pale, and mousse-like. A few more gentle folds will sort out any streaks.

Take your time here. Gentle and thorough is better than fast and careless. The more air you keep in, the lighter the final texture.

Step 5

Assemble

Spread a thin layer of cream on the bottom of your dish — this anchors the first layer of biscuits.
One by one, dip each savoiardo into the cold coffee for 3–5 seconds per side, then lay it in the dish. They should feel soft and heavy.
Cover with a generous layer of cream. Smooth the top with a spatula.
Repeat: a second layer of dipped biscuits, then the remaining cream on top. Finish with cream.
Cover with plastic wrap and refrigerate for at least 4 hours. Overnight is strongly recommended.

💡

3–5 seconds per side gives a deeply saturated biscuit layer. After an overnight rest, coffee melds into the cream and everything becomes one cohesive, custardy mass.

Lay the biscuits in the second layer perpendicular to the first for more structural stability when you cut and serve.

Step 6

Finish and Serve

Just before bringing to the table, dust the surface generously with cocoa powder through a fine sieve.
Serve immediately.

Dust right before servingNever dust the cocoa before refrigerating. It will absorb moisture overnight and turn dark and wet-looking.

Getting a Strong Coffee Flavor

If you love a bold, deeply coffee-forward tiramisù, the answer is not to soak the biscuits longer. Longer soaking = soggy and watery. Instead:

Brew the espresso extra strong — use less water than normal (ristretto-style). Same 600ml volume, much more intensity.
Add 1–2 tbsp instant espresso powder to the 600ml of brewed coffee while still hot, then chill. This is in Montersino's own notes.
Add 2–3 tbsp of coffee liqueur (Kahlua, Tia Maria) to the coffee soak. Amplifies aroma dramatically. Keep a separate soak for children.

💡 With 3–5 second soaking, biscuits look quite wet going in — that's exactly right. After 8–24 hours in the fridge, the coffee spreads through the layers and the whole thing sets into a dense, cohesive dessert.
